Healthy recipe for delicious baked eggs

Are you ready to get nourishing with our healthy recipe for delicious baked eggs? Because we’ve made a scrumptious recipe for you… Here’s our very own leek & cherry tomato baked eggs.

Serves 2-3 | Prep time 5 minutes | Cook time 27 minutes


  • 2 teaspoons olive oil
  • 1 leek, sliced
  • 1/2 cup chicken stock
  • 1 punnet cherry tomatoes
  • 1/2 cup chopped tin tomatoes
  • 3 sprigs parsley, chopped
  • Pinch cumin and Himalayan salt
  • Salt and pepper
  • 4 -6 eggs depending on mouths


Preheat the oven to 180 degrees. Heat olive oil in oven proof fry pan on medium heat and sauté leeks 3 minutes. Add in stock and simmer 5 minutes until reduced. Add in cherry tomatoes and cook for 4 minutes. Add tin tomatoes, salt and cumin and simmer 5 minutes. Crack eggs into pan and sprinkle with parsley. Bake for 8-10 minutes or until eggs are cooked through. Garnish with avocado slices and pepper.

This recipe works perfectly if you’re a cheeky dipper and you love to rip off some fresh crusty sourdough and dunk it straight into the saucy tomato goodness and the runny egg yolk. Can you tell we are drooling just thinking about it?
